This is my recipe for Tomato Curry.
If Curry is one of your favorites, let's make it!
It's easy and simple, you can choose the kind and amount of carbs.
(rice, couscous, pasta, even bread)
All you need is a teflon pot with a top.
*Ingredients: You can choose how much of everything:
onion
carrot
eggplant
zucchini
bell pepper: red, yellow, orange, anything is ok.
curry powder
tomato
(boiled and peeled. squeeze the tomato into squishy chunks with your hands)
Japanese tomatos are mostly juicey, so the curry comes out almost like soup. If you choose a firmer tomato the curry will be chunkier.
Plus protein (meat, shrimp, tuna are all good)
the vegetables really don't matter, you can choose anything you like.
Using a Teflon pan, avoid oil as much as possible.
You can follow the above list for the correct order to add the vegetables.
This recipe can be adapted to fit your changing PCP diets. It's simple but flexible. There's no salt, and just a little oil, and if makes eating 200 grams of vegetables easier. :)
